Watermelon Salad

The great thing about this recipe is you can mix it up - depending on how you feel - the herbs can be muddled or subsituted, you can use black or green olives, olive oil or no oilve oil - remember this salad is to be refreshing, not heavy and nor greasy - and you can add a scatter of finely sliced onion if you wish.

Watermelon Feta Salad

Ingredients

  • 1/2 Watermelon - cut into rough chunks
  • 1 block of feta cut or crumbled into pieces
  • Bunch of mint finely chopped - you can subsitute basil, parsley or coriander - or mix them up
  • Green Olives quartered
  • 1 cucumber roughly chopped
  • Juice of one lime
  • Drizzle of herby olive oil optional
  • Black Pepper

Method

  1. Place all the ingredients in a large bowl, toss gently with the lime juice and freshly ground pepper
  2. Drizzle with Olive Oil - serve.  This salad is brilliant as a late night dinner, on a platter at a lunch party or served with grilled or BBQ'd meats

Mango, Pomegranate, Herb and Rocket Salad

This salad combines, fresh scented ingredients, with soft sweet mango flesh, and the crunch of pomegranate seeds.  The sweet, citrusy and light flavours are refreshing.

As one of my favourite salads I serve it frequently, at my table, its colours beautiful to the eye as the palate.

Mango, Pomegranate, Herb and Rocket Salad

(serves 4-6)

Ingredients

 

  • 2 bags of mixed baby leaf salad
  • 1 bag of rocket
  • Seeds of 1 Pomegranate
  • 1 mango cut into cubes
  • Juice of 1 lime
  • Bunch of mint chopped
  • Bunch of coriander chopped
  • Bunch of basil chopped
  • Freshly ground Pepper
  • Drizzle of Extra Virgin Olive Oil (optional)

 

Method

 

  1. Prepare all your ingredients
  2. Toss everything together in a large bowl, including oil, lime and pepper
  3. Serve 

 

I love salad, fresh flavours, scented with herbs and this salad ticks all the boxes.  Roast meat, especially BBQ I enjoy but I hate the heaviness of roast dinners - everything cooked, and drenched in gravy.  My idea of the worst meal on earth.  

But combine this salad with its light delicate fragrant flavours with roasted meat, and you have a perfect meal.

Pimped Protein Smoothie

Pimped Protein Smoothie

(makes two medium glasses of smoothie)

Ingredients

 

  • 1-2 cups of cooled green tea (depending on the thickness of smoothie you like)
  • 1 cup of unsweetened almond milk
  • 2 tbsp chia seeds
  • 1 tbsp peanut butter
  • 4 brazil nuts
  • 1 small banana chopped
  • 1 small scoop of vegan protein powder
  • Ice

 

Method

 

  1. Place all ingredients in a blender
  2. Blend until smooth
  3. If too thick add more green tea

French Toast Recipe

Known by children the world over as 'Eggy Bread' there is an immense happiness for adults and younger members of the household alike that comes from biting into this sweet, airy, and every so slightly crunchy breakfast.

French Toast Recipe

Ingredients

  • 1 loaf of Marks and Spencer sliced Broiche
  • 3 eggs
  • 1 1/4 cups semi skimmed milk
  • 1/4 cup caster sugar
  • pinch of salt
  • optional 1/2 tsp vanilla essence or ground Cinnamon
  • Butter for frying

Method 

  1. Whisk the eggs until well combined
  2. Add the milk, salt and sugar, until everything comes together (add the vanilla and cinnamon at this point)
  3. Pour the mixture over two slices of bread at a time and leave to soak for a couple of minutes each side
  4. Fry the butter until it foams, watch carefully as the time between foaming, browning and buring are a matter of moments
  5. Slide in a slice of eggy bread and fry until it is golden and crisp on each side
  6. Serve immediately sprinkled with sugar, or drizzled with Maple Syup

Serve sprinkled with sugar.  Cinnamon or vanilla sugar are also winners.  Although this French toast needs nothing more than a sprinkle of sugar, it is also verging on divine served with Maple Candied Bacon.

This toast is a great first recipe to introduce children to cooking.

Fluffy Pancakes

This is my perfect recipe - the buttermilk is the secret - for the best pancakes in the world, fluffy and thick.  It's based on an old family recipe for Scotch pancakes.

Ingredients

  • 4oz self raising flour or self-raising wholemeal flour
  • 1/2 tsp baking powder
  • 1/2 pint buttermilk
  • 3oz golden fair trade caster sugar
  • 1 large egg
  • butter/oil to grease

Method

  1. Using this pan over a medium heat or lift the Aga simmering lid grease with butter at least one and a half hours before cooking
  2. Mix the dry ingredients in a large bowl, make a well in the middle
  3. Crack in the egg, and beat into the flour with an electric handwhisk, the mixture will get bitty quickly, have the buttermilk on hand to pour in as you hold the beaters in the other hand
  4. You may not need all the Buttermilk, sometimes I use less than 2/3s of the amount stated, the beaters should leave a thick trail in the mixture
  5. Mix on high for 2minutes until the batter is smooth and all ingredients well incorporated
  6. If possible leave the batter to sit covered overnight in the fridge, otherwise leave it for as long as you can before cooking
  7. Cover a wire rack with a tea towel, and set beside the cooker
  8. Using a large spoon ladle one pancake onto the middle of the griddle/pan - I cook them one at a time because I like quite large pancakes usually 9" in diameter, although if you are cooking for children, make them the size of the diameter of a small glass.
  9. Let the pancake cook until the bubbles that have formed all begin to burst
  10. Using a palate knife quickly slice under the pancake and flip over, cook for about 30 sec to one minute, flip again, both sides should be golden, and the pancake all puffed up and if ready, place onto the wire rack, and cover with the tea towel
  11. Serve with lemon and sugar, and fresh pineapple and mixed berries, tossed together with the juice of a lime

And, in the morning, I'm making PANCAKES!
